Chunky KANZI® Apple Oat Cookies

Serves: 12 cookies
Method
- Preheat the oven to 160°C & line a baking tray with baking paper. Blitz ¾ cup of the oats to a blender until slightly finer (not a full flour), then add to a large mixing bowl with remaining oats, flour, cinnamon & baking powder and mix to combine.
- Add butter, egg & maple then mix to just combine. Fold through the KANZI® apple chunks.
- Scoop 12 spoonfuls onto the baking tray & flatten slightly.
- Bake for 15-18 minutes until lightly golden & just set (don’t overbake), then allow to cool on a wire rack so the firm up.
- Store in an airtight container in the fridge for up to 5 days or freeze for 2-3 months.
