KANZI® Apple Protein Pancakes

INGREDIENTS

  • 3 large eggs

  • ¾ cup Greek yoghurt

  • 1 cup milk of choice

  • ¾ cup wholemeal flour

  • ¾ cup protein powder (sub for equal parts flour if you don’t want to use protein powder)

  • 1½ tsp baking powder

  • 1½ tsp cinnamon

  • 3 KANZI® apples, skin on & finely diced

INSTRUCTIONS

Method:

  1. Preheat the oven to 180°C. Divide eggs, yoghurt & milk between 3 bake-proof glass containers & mix until a smooth batter forms.
  2. Next divide flour, protein powder, baking powder & cinnamon between containers and mix. Divide diced KANZI® apples between containers & fold through, leaving about 1 tbsp diced to top.
  3. Sprinkle each with remaining KANZI® apple & dusting of cinnamon, then bake for around 20–25 minutes or until cooked through.
  4. Store with lids on in the fridge for up to 4 days or freeze for up to 2 months. Serve with a drizzle of nut butter if desired. Enjoy.
