Chunky KANZI® Apple Oat Cookies

INGREDIENTS

    • 1½ cups plain rolled oats
    • ½ cup wholemeal flour
    • 1 tsp cinnamon
    • 1½ tsp baking powder
    • 2 Tbsp butter, melted
    • 1 egg
    • ⅓ cup pure maple syrup
    • 2 KANZI® apples, chopped into small chunks ~1cm

Serves: 12 cookies

Method

  1. Preheat the oven to 160°C & line a baking tray with baking paper. Blitz ¾ cup of the oats to a blender until slightly finer (not a full flour), then add to a large mixing bowl with remaining oats, flour, cinnamon & baking powder and mix to combine.
  2. Add butter, egg & maple then mix to just combine. Fold through the KANZI® apple chunks.
  3. Scoop 12 spoonfuls onto the baking tray & flatten slightly.
  4. Bake for 15-18 minutes until lightly golden & just set (don’t overbake), then allow to cool on a wire rack so the firm up.
  5. Store in an airtight container in the fridge for up to 5 days or freeze for 2-3 months.
